Grilled octopus with kimchi panko en Arko, japanese restaurant in Barcelona near Eixample, the best quality vs price ratio
Why crunchy food provides so much satisfaction to the human brain is a mystery that scientists are yet to explain. Fortunately, the “why” is not crucial when it comes to the joy, that the combination of the textures and sounds brings, while taking each bite. The Japanese panko, puff pastry, delicate and crunchy, is one of the ingredients that we’re using in Arko to create this delicious sensation.
The authentic Japanese panko is made with traditional methods. It starts by combining the high quality ingredients- flour, sugar, yeast and salt, which are left to ferment multiple times until they reach appropriate texture and size. Loaves are then formed and carefully baked in molds in an electric oven. The result is a crustless bread which is grated to obtain airy and very light flakes.
En Arko, when it comes to panko, we’re adding a kimchi seasoning, one of the most popular banchan or fermented Korean snacks. Once it’s seasoned, we’re using it in our grilled octopus with kimchi panko whose slightly spicy and intense touch combines perfectly with the smokiness of the tender octopus, grilled to perfection on our Robata.
