The word nigiri (ni-giri) in Japanese means “two fingers”. This is a typical portion of rice that sushi masters use to perform the act known as “nigiru”, take the rice that will serve as a base for a piece of fresh fish or seafood (or other more creative ingredients). All the words combined form the final name of nigirizushi, by which this delicious food is known.
Its clean and simple form and presentation makes it the most “honest” type of sushi “without surprises”, that you can pick from any menu, because all of the ingredients always stay visible to the customers. The nigiri seems quite easy to eat- you can do it with chopsticks or carefully with your hands, but when it comes to the preparation it’s not as easy anymore. The way fish is handled and rice is shaped requires a lot of training and dedication.
