Our sushi rice uses two key ingredients: “Koshihikari” rice, known forits special aroma and flavor, and aunique vinegar seasoning.
The seasoning is made of red rice vinegar from a renowned Japanese vinegar house established in 1937. This vinegar house is dedicated to preserving the tradition of aged vinegar from sakelees.
This combination results in a unique rice with a distinct texture, flavor, and darker color compared to traditional white rice. Additionally, all the fish we use, including salmon, are free from antibiotics, hormones, and anisakis. Furthermore, the soy used in our
restaurant is gluten-free.
